This dessert is the coming together of the baking traditions of the two places I call home: The Indian South and the American South.

A different take on traditional carrot cake- my version highlights the tang of fresh carrots by infusing the recipe with hints of clove, cardamom, and festooned with black peppercorns.

Lauded as one of the country’s best fried chicken by Bon Appetit Magazine, Fox News, and the Miami Herald as well as others, this much-loved dish gets it’s unique flavor from a 24 hour brine in Chef Asha’s secret spice blend, a drizzle of coconut oil and fresh mango sauce, finished with roasted curry leaves. You can experience Asha’s Kerala Fried Chicken on Fridays and Saturdays at Spice To Table from 11am until it runs out.

From our beginnings as an underground supper club called Spice Route Supper Club, to the Kerala inspired upscale restaurant Cardamom Hill, and now the casual Indian pattiserie Spice To Table, Asha’s story is the evolution of self, of rites of passage, as a chef, and culinary traditions.
